Each Polus is made in a different way, varying: the selection of Tempranillo, Graciano or Viura grapes from our octogenarian vineyards; winemaking method; and fermentation and maceration container (tank, vat, open barrel, French oak barrel, etc.), resulting in single varietals with a marked personality.

Created in 1982 by my father Luis, it reflects the legacy we have inherited from my parents and grandparents. A wine that tells the story of a special land, where everything is done naturally and in harmony with the environment.
The grapes used to make this wine, Tempranillo, Graciano and Mazuelo, come from our own vineyards in Rioja Alavesa. After a manual harvest, using traditional winemaking processes, we obtain this wine is aged in American oak barrels.
An oil with a natural and intense aromatic flavor, fruit of the arróniz olives of our land.
The arróniz olive tree is one of those stately trees that adorn our landscape next to the vineyard. We are fortunate to have centenary olive trees sharing habitat with our vineyards from which we collect the olives with which we elaborate our Extra Virgin Olive Oil.
The manual harvesting at the optimum moment of ripening together with its transfer during the day for its cold pressing allows us to obtain an intense oil with a high fruitiness and a good balance between bitterness and spiciness.
