Polus

Polus is our most innovative line of wines, present in the market since 2005, when we decided to make an evolution in the winery and start making different wines.

The name Polus comes from the 1922 novel by Pío Baroja “La leyenda de Jaun de Alzate”, where Polus is the name of the owner of the tavern where the lord of Alzate (Jaun de Alzate) used to meet with his friends to drink and chat. We were looking for a name related to our other line of wines, Jaun de Alzate, created by my father in 1982. The name appealed to us and we began to fulfill our dream.

Each Polus is different from the other, by grape selection, by winemaking method, by container where fermentation and maceration take place (tank, vat, open barrel), giving rise to single varietals of Viura, Graciano and Tempranillo with a marked personality.

From our octogenarian vineyards we obtain, through manual harvesting, the different types of grapes used for these wines: Tempranillo, Graciano and Viura.

Looking for a different line of aging, we chose French oak as the origin of the wood in which to age these wines. Years later, the effort has been worth it and today Polus is a consolidated brand that has given us a lot of satisfaction.

Polus Viura

VIURA

This fresh and casual wine that comes from the Viura variety of 80-year-old vines awakens your senses by surprising you with its powerful nose and elegant palate.

Flowers, tropical fruit aromas capture your attention when you approach it to the nose, and its smoothness, balance and harmony in the mouth confirm that first sensation.

A wine to enjoy in company in informal moments that will leave pleasant memories.

Polus Rosado

ROSÉ

This tempranillo rosé from a 21-year-old vineyard is a recent bet of the winery.

Fermented slowly at low temperature, it allows the fresh aromas of Tempranillo to be fully preserved.

On the palate it is elegant and round in a wine with a nice pale cherry color.

Ideal for seasonal cuisine, rice, pasta, grilled vegetables, pizzas and even without accompaniment.

Polus Crianza

CRIANZA

This monovarietal Tempranillo comes from a 45 year old vineyard after a selected manual harvest in the vineyard.

Discover the aromas, power and structure of the Tempranillo variety, very well assembled with the nuances and finesse of French oak.

The months in bottle make it a fresh and complex wine that will make every tasting a special moment.

Polus Tempranillo

TEMPRANILLO

This wine is the whim of the winery, made with the best selected clusters and we want to share it with you.

It is a wine that requires a lot of attention, gently tapping each of the barrels several times a day using the “bazuqueo” method.

It ferments in new open French oak barrels, where after closing it will remain for the months of aging and will not be bottled until it is verified by tasting that it is ready for it.

  • Type of wine: Signature red wine fermented in 225L barrels. Limited production of 8.500 bottles.
  • Variety: 100% Tempranillo.
  • Alcoholic graduation: 14% Vol.
  • Ageing: 14 months in French oak barrels.
  • Consumption temperature: 18ºC.
  • Capacity: 750ml.
Polus Reserva

RESERVA

This 100% Tempranillo wine shows all the richness and intensity of its vintage. From vines with low production and 75 years old, it is made in French oak vats with a capacity of 5,000 liters. Alcoholic and malolactic fermentations take place in the vat where it remains for a total of 11 months. It will then enter French oak barrels where it will gain fine tannins, vanilla, smoked, tobacco and tobacco. ….

The 6,600 bottles of its limited production will rest in the bottle for 18 months to obtain a complex, intense and silky wine.

  • Type of wine: Reserve red wine. Production limited to 6.000 bottles.
  • Variety: 100% Tempranillo.

  • Ageing: 11 months in French oak vats, 18 months in French oak barrels and 18 months in bottle.

Polus Graciano

GRACIANO

A wine made from a different variety, with rounder leaves and intense green, small berries and blackish color. Vines with multiple small clusters that entertain the harvest. Grapes that need more days to ripen.

It is the wine of intense violets, with a complex nose and powerful flavor.

But it has a secret, it is only made in years when the grapes are fully ripe. Assembled with 15% Tempranillo, it is then aged in French oak barrels, and finally spends many months in bottle where it will soften its tannins and power.

  • Variety: Graciano 85%, Tempranillo 15%.
  • Alcoholic graduation: 14% Vol.
  • Aging: 18 months in French oak barrels.
  • Consumption temperature: 18ºC. Decanting before consumption.

Polus Vendimia Tardía

LATE HARVEST

We were missing a semi-sweet wine, and we decided on a late harvest.

This 100% Viura wine is made from grapes raisined on the vine. Once the September harvest arrives, the vines keep their clusters and the effect of the sun, the autumn wind and the absorption of the vine itself achieve the raisining of the grapes.

Harvested between late December and early January, depending on the year, it then undergoes a delicate fermentation that allows us to enjoy this wine.

Dare to enjoy this golden-yellow wine, where raisins, honey, quince, vineyard peach and its balance between acidity and sweetness, invite you to enjoy it with sweets and desserts or smoked starters, salted meats…
